Protein Pancakes

I came across this recipe while exploring other blogs. It comes from Janetha over at Meals and Moves and I can't wait to try it. The recipe can also be seen here along with 2 other protein packed meals using cottage cheese on PBF as a guest post.

The recipe (serves one):

Approximate nutrition info for recipe base :
200 calories, 20g protein, 21g carbs, 4g fat.
  • 1/3 cup old fashioned oats
  • 1/3 cup low fat cottage cheese
  • 1/3 cup (or two) egg whites
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • sweetener of choice, such as stevia, agave, sugar, etc (optional)
  • fruit, nuts or other fold-ins like coconut or chocolate chips (again, optional)

Combine all ingredients (except fold-ins) in a blender or Magic Bullet and blend until smooth. Fold in any additional ingredients, if desired.

Pour batter onto a heated and oiled pan or griddle and cook just like normal pancakes.

  1. These are really good served with sugar free maple syrup too! Definately make them.
