*Weigh-in*

I weighed-in at 100.1 kg this morning which was actually a better result than I was expecting. It's a 600 grams loss since the last time I weighed myself so I am extremely happy with that. Any loss for me at the moment is a bonus!

Finally, it feels like I can feel the light hitting my face. I feel as though I am slowly starting to break through my self-induced plateau. I have been following the wagon for a few months now and I feel as though I can really get back on now and give it my best. My husband actually gave me a shove back up onto the wagon the other day with some harsh truths, that must have knocked some sense into my silly head - I have done this to myself and I am the only one who can change it.

I sat down yesterday and made up some charts and plans. I am hoping that having these on the fridge will help me prepare myself for the week ahead and make it easier for me to stick to my plans. I have a weekly menu plan, a weekly exercise plan and a weight loss chart. I am going to laminate them later today and then I can use a whiteboard marker to change my food and exercise planners each week to keep it interesting.

I am absolutely loving the weight loss chart, which I got from Michelle Bridges Crunch Time book. After weighing-in this morning I recorded today's weight and then I wrote on the chart what weight I would like to be next week, the week after and so on until the end of December. I love seeing the smaller numbers each week. For some reason, it makes the weight loss look more achievable, I don't know how or why, but it just makes me feel like I can do it. I can actually picture myself at the smaller weights which is a great feeling, especially since even in my dreams I am the ugly fat girl. I suppose anyone would feel ugly and fat standing next to Kim Kardashian in their local Italian Deli -

I don't know what is going on in my head lately, but my dreams have been really vivid and strange. I do know that I am back on track, I am ready to refocus, refresh my life and restart my weight loss journey.

*101 Things in 1001 Days*
#39 - Buy a Maiden Hair Fern

Hubby took me and the kids to a craft market last weekend where I came across one of my favourite plants - the Maiden Hair Fern. I also love the Marcia's Pride variety, but they didn't have any of those. I am really happy with my fern, she sits in the kitchen and is one of the first things I see in the morning. I just find plants really peaceful for some reason, maybe it's because they don't scream, cry, fight and talk back like 3 and 4 year old children do!!

*Dinner Preparation*

Dinner prep. started with getting the kids settled this morning with a snack - today it was carrots while watching the Mickey Mouse Club show on Foxtel. This gives me at least 30 mins of peace and uninterrupted kitchen time.

First up was the marinade for my tofu - Peanut Butter!

I put 2 blobs in my Pyrex jug and added a little water.

Stirred until I had a smooth paste, then gradually added dribbles of water until I had the consistency that I wanted. Despite the water, the peanut butter does not lose any flavour.

Next in was about a teaspoon of soy sauce which I stirred in.

I then drizzled the sauce over my cubed (firm) tofu (I can't handle the texture of the silken tofu).

Lastly, I smothered all of the tofu in the sauce, covered with Glad Wrap and put it in the fridge for later tonight for my stir-fry. I am hoping to have some delicious peanut butter flavoured tofu.

This took no time at all and the kids were still entertained with the TV and their carrots so I made spaghetti bolognaise for their dinner and got started on the roast for my husband and other son. I can't wait until I don't have to make 3 different meals each day - I am hopeful that one day I will discover something that everyone likes.

  1. I'm with you Jane...sometimes you just need some harsh words to get back into it!

Cheers to both of us breaking through some plateaus!
